Tobie Puttock shares his chef secrets with this crispy roast pork belly recipe. An easy & tasty recipe with crunchy crackling.

Prep: 15 mins | Cook: 2½ hours | Serves: 6

Ingredients:
1.2kg piece Woolworths Australian pork belly, rind scored
3 garlic cloves, crushed
1 tablespoon fresh thyme leaves, plus extra to garnish
1½ tablespoons Woolworths Select Spanish mellow olive oil
1 large onion, thickly sliced into rounds
1½ lemons, thickly sliced into rounds
1 tablespoon Homebrand fine table salt
Woolworths Select apple sauce, to serve
Autumn greens
50g Woolworths Select butter, chopped
1 tablespoon Woolworths Select Spanish mellow olive oil
¼ savoy cabbage, washed, finely shredded
6 silverbeet leaves, stalk removed, washed, finely shredded
1 cup Woolworths Select frozen baby green peas
2 tablespoons Woolworths sour cream
½ lemon juiced

Method:
1. Pat the pork dry with paper towel; turn skin-side down onto a board. Combine garlic, thyme and 2 teaspoons oil then rub over meat. Arrange onion and lemon over the base of baking paper-lined shallow roasting pan. Turn pork rind side-up and put into centre of the pan on top of onion and lemon. Pour in ½ cup water around the pork. Rub the rind with remaining olive oil, sprinkle over the salt.
2. Preheat the oven to 240°C fan-forced. Roast for 45 minutes, adding extra water as necessary, or until skin is blistered and golden. Reduce the oven to 160°C fan-forced and roast, uncovered for a further 1-1½ hours or until the pork is tender, cooked through and the rind is crisp. Rest the pork belly, uncovered, for 15 minutes.
3. Meanwhile, for the autumn greens, heat butter and oil in a large frying pan or sauté pan over medium-high heat until butter is melted. Add cabbage and silverbeet and sauté for 3-4 minutes until just wilted. Stir through peas, sour cream and squeeze over lemon juice. Season.
4. Slice the pork and arrange on serving plates. Serve with autumn greens, apple sauce and extra thyme leaves.

Tip1: The Woolworths Australian pork belly comes pre-scored for your convenience. If using a Macro Pork belly - use a Stanley knife to finely score the rind in a criss-cross pattern, without cutting through to the meat. Cut into the rind but not into the flesh.
Tip2: Place the pork on a tray the day before and store uncovered in the refrigerator to dry out the rind overnight.
Tip3: Shred any leftover pork and serve on bread rolls with coleslaw and mayonnaise for lunch the next day.
